Portuguese winters can be incredibly humid, especially if your Kamado is left unused for weeks in a covered terrace. Trapped moisture inside the thick cordierite ceramic dome creates the perfect breeding ground for white fuzzy mold.

Grelhado na Brasa
Caught in the cold, turbulent currents where the Atlantic meets the Mediterranean. We grill it whole, scales on, protected by a crust of Flor de Sal from Castro Marim. The high-heat fire preserves the pearly texture of the wild white fish.

Not the chicken found in every supermarket, but the heritage birds from the hills of Guia. Marinated for 24 hours in our signature 'Fogo' piri-piri blend, then spun over almond-shell embers until the skin blisters and the meat stays dripping.
